Ingredients

  • 2 pieces chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic cloves, minced
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 3 cups baby spinach leaves
  • 12 ounces penne pasta
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon red pepper flakes (optional)

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and fully cooked (internal temperature of 165°F). Remove the chicken from the skillet and set it aside to rest.

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once the butter is melted, add minced garlic and sauté for 1 minute until fragrant.
