Ingredients

  • 2 whole Cornish game hens
  • 3 tablespoons Olive oil
  • 6 cloves Garlic
  • 4 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 1 whole Lemon
  • 0.5 cup Orange juice
  • 2 tablespoons Honey
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.5 cup Chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the Cornish game hens under cold water and pat them dry with paper towels. Remove any giblets from the cavities if present.

Step 3

Season the inside of each hen with a pinch of salt and pepper. Place 2 garlic cloves, 1 sprig of rosemary, 1 sprig of thyme, and a quarter of the lemon inside each cavity.

Step 4

Rub the outside of each hen with olive oil, ensuring the skins are coated evenly. Sprinkle the remaining salt and pepper over the outside of the hens.

Step 5

In a small bowl, whisk together the orange juice, honey, and the juice from the remaining lemon halves.

Step 6

In a roasting pan or baking dish, place the hens breast-side up. Pour the chicken broth into the bottom of the pan to keep the hens moist while cooking.

Brush the orange juice and honey mixture generously over the hens, reserving some for basting later.

Place the roasting pan in the preheated oven and cook for 45-55 minutes, or until the internal temperature reaches 165°F (74°C). Baste the hens with the remaining orange glaze every 15-20 minutes for extra flavor.

If the skin is not evenly browned by the end of the cooking time, increase the oven temperature to 425°F (220°C) for the last 5 minutes.
