  • 2 pieces boneless, skinless chicken breasts

  • 3 cloves garlic, minced
  • 2 15-ounce cans canned white beans (such as cannellini or great northern beans), drained and rinsed
  • 4 cups chicken broth
  • 2 4-ounce cans canned diced green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 0.25 cup fresh cilantro, chopped
  • 4 wedges lime wedges, for serving

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chicken breasts to the pot and cook for about 4-5 minutes per side, or until golden brown. Remove and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until softened.
