Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 cup Vegetable oil
  • 1.5 cups Sugar
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 3 cups Fresh apples, peeled and diced
  • 1 cup Chopped pecans or walnuts (optional)
  • 0.5 cup Unsalted butter
  • 1 cup Brown sugar, packed
  • 1.5 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.

Step 3

In a large bowl, combine the vegetable oil, sugar, eggs, and vanilla extract. Mix until well blended.

Step 4

Gradually add the dry ingredients into the wet ingredients, stirring until just combined.

Step 5

Fold in the diced apples and chopped pecans or walnuts, if using.

Step 6

Pour the batter into the prepared baking pan and spread it evenly.

Step 7

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 8

While the cake is baking, prepare the caramel glaze. In a small saucepan over medium heat, melt the unsalted butter.

Step 9

Add the brown sugar and heavy cream to the saucepan, stirring constantly until the mixture comes to a gentle boil.

Step 10

Reduce the heat to low and simmer for 2-3 minutes, then remove from heat and stir in the vanilla extract.

Step 11

Once the cake is done, remove it from the oven and let it cool for about 10-15 minutes in the pan.

Step 12

Pour the warm caramel glaze evenly over the top of the cake, spreading it out with a spatula if necessary.

Step 13

Allow the glaze to set slightly before serving. Enjoy warm or at room temperature.
