Ingredients

  • 1 medium head (about 2 lbs) Green cabbage
  • 2 large Carrots
  • 0.5 small Red onion
  • 0.75 cups Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1.5 tablespoons Honey
  • 1 teaspoon Dijon mustard
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove any tough or damaged outer leaves from the cabbage. Cut the cabbage in half, remove the core, and finely shred the cabbage using a sharp knife, mandoline, or food processor. Transfer to a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or food processor. Add the grated carrots to the bowl with the shredded cabbage.

Step 3

Thinly slice the red onion into very fine strips or dice it finely. Add to the mixing bowl with the other vegetables.

Step 4

In a separate smaller bowl, prepare the dressing by whisking together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth and creamy.

Step 5

Pour the dressing over the shredded vegetables and toss thoroughly to evenly coat all the ingredients. Use salad tongs or clean hands to mix everything together well.

Step 6

Cover the bowl and refrigerate the coleslaw for at least 1 hour before serving to allow the flavors to blend and the texture to soften slightly.

Step 7

Before serving, give the coleslaw a gentle toss, and adjust seasoning with additional salt and pepper if desired.
