Ingredients

  • 4 links Polish sausage
  • 4 large Russet potatoes
  • 1 large Yellow onion
  • 2 medium Bell peppers (red, green, or yellow)
  • 2 cloves Minced garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoon Dried thyme
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the potatoes into 1-inch chunks. Place them in a bowl of cold water to prevent browning while you prep the other ingredients.

Step 2

Slice the Polish sausage into 1/2-inch rounds. Thinly slice the onion and bell peppers. Mince the garlic.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium heat. Drain the potatoes and pat them dry with a paper towel. Add the potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are golden brown and starting to soften.
