Ingredients

  • 12 sheets Filo pastry sheets
  • 1 pound Ground beef
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 cup Black beans, canned, drained and rinsed
  • 1 cup Corn kernels, canned or fresh
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Cilantro, chopped (optional)
  • 4 tablespoons Butter, melted
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon, about 6-7 minutes.

Step 4

Stir in the tomato paste, cumin powder, chili powder, and salt. Cook for another 2 minutes to blend the flavors.

Step 5

Add the black beans and corn to the skillet, stirring until well combined. Cook for an additional 2 minutes and remove from heat.

Let the filling cool slightly, then stir in the shredded cheddar cheese and optional cilantro.

Lay out one sheet of filo pastry on a clean, flat surface and lightly brush it with melted butter. Place another filo sheet on top and brush it with butter as well.

Spoon 2-3 tablespoons of the beef mixture onto the lower third of the filo sheet. Fold the sides in and roll it tightly, starting from the bottom, into a cigar shape.

Place the rolled filo seam-side down on the prepared baking sheet. Repeat with the remaining filo sheets and filling.

Brush the tops of all the rolls with melted butter to ensure a golden, crisp exterior.

Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and crispy.

Step 12

Remove the rolls from the oven and let them cool slightly. Serve warm with sour cream and salsa on the side for dipping.
