Ingredients

  • 200 grams all-purpose flour
  • 100 grams unsalted butter (cold, cubed)
  • 3 tablespoons ice water
  • 1 teaspoon salt
  • 100 grams walnuts (chopped)
  • 100 grams blue cheese (crumbled)
  • 150 milliliters heavy cream
  • 2 eggs
  • 50 grams dried cranberries
  • 1 tablespoon honey
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a food processor, combine the all-purpose flour, salt, and cold, cubed butter. Pulse until the mixture resembles coarse crumbs.

Add the ice water, one tablespoon at a time, pulsing after each addition until the dough just starts to come together.

Turn the dough out onto a clean surface, form it into a disk, wrap it in plastic wrap, and refrigerate for 20 minutes.
