Ingredients

  • 1 medium Daikon radish
  • 2 large Carrot
  • 3 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 teaspoon Honey
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sesame seeds
  • 1 stalk Green onion
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

Peel the daikon radish and carrots. Use a mandoline slicer or a sharp knife to julienne them into thin matchstick-sized strips.

Step 2

Place the julienned daikon radish and carrots into a large mixing bowl.

Step 3

In a separate small bowl, prepare the dressing by whisking together the rice vinegar, soy sauce, honey, sesame oil, salt, and pepper until well combined.

Step 4

Pour the dressing over the daikon radish and carrots. Toss to coat all the vegetables evenly.

Step 5

Thinly slice the green onion and sprinkle it over the salad along with the sesame seeds.

Step 6

Let the salad sit for 10-15 minutes to allow the flavors to meld together. You can refrigerate it during this time for a chilled salad.

Step 7

Give the salad one final toss before serving. Serve fresh as a side dish or appetizer.
