Ingredients

  • 4 cups Fresh strawberries
  • 1 9-inch crust Pre-baked pie crust (sugar-free)
  • 1 cup Water
  • 2 tablespoons Granulated sugar substitute (like Stevia or Splenda)
  • 2 tablespoons Cornstarch
  • 1 3-ounce package Sugar-free strawberry gelatin mix
  • 1 cup Whipped topping (sugar-free, optional)

Directions

Step 1

Hull and wash the fresh strawberries. Slice half of the strawberries and leave the other half whole.

Step 2

Arrange the whole strawberries in a single layer at the bottom of the pre-baked sugar-free pie crust.

Step 3

In a medium saucepan, mix water, sugar substitute, and cornstarch. Whisk until smooth and well combined.

Step 4

Place the saucepan over medium heat. Stir continuously and cook the mixture until it becomes thick and bubbly, about 5-7 minutes.

Step 5

Remove the saucepan from the heat, and stir in the sugar-free strawberry gelatin mix until it is fully dissolved.

Step 6

Let the gelatin mixture cool for about 5 minutes, then gently fold in the sliced strawberries.

Step 7

Pour the gelatin-strawberry mixture over the whole strawberries arranged in the pie crust, ensuring the mixture spreads evenly.

Step 8

Refrigerate the pie for at least 3-4 hours or until the filling is set.

Step 9

Before serving, optionally garnish with sugar-free whipped topping. Slice and enjoy!
