Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 2 tablespoons Olive oil
  • 1.5 tablespoons Unsalted butter
  • 4 cloves Garlic (minced)
  • 0.25 cup Low-sodium chicken broth
  • 2 tablespoons Fresh lemon juice
  • 3 medium zucchinis Zucchini (spiralized into noodles)
  • 0.25 teaspoon Red pepper flakes
  • 2 tablespoons Fresh parsley (chopped)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Allow the butter to melt.
