Ingredients

  • 1 cup whole wheat pastry flour
  • 1 cup skim milk
  • 2 large eggs
  • 1 tablespoon unsalted butter, melted
  • 0.25 teaspoon salt
  • 0 cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a standard 6-cup muffin tin in the oven to warm while you prepare the batter.

Step 2

In a medium mixing bowl, whisk together the whole wheat pastry flour and salt.

Step 3

In a separate bowl, whisk the eggs, skim milk, and melted butter until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until the batter is smooth. Avoid overmixing.

Step 5

Carefully remove the preheated muffin tin from the oven and spray each cup lightly with cooking spray.

Step 6

Divide the batter evenly among the 6 muffin cups, filling each about halfway.

Step 7

Immediately place the tin in the oven and bake for 20-25 minutes, or until the popovers are puffed up and golden brown. Do not open the oven door during baking, as this may cause the popovers to deflate.

Step 8

Once baked, remove from the oven and serve warm. Enjoy as is or with a diabetic-friendly spread of your choice!
