Ingredients

  • 4 pieces boneless center-cut pork chops (about 1-inch thick)
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon paprika (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup low-sodium chicken broth
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork chops dry with a paper towel to help with browning.

Step 3

In a small bowl, mix the olive oil, garlic, rosemary, thyme, paprika (if using), salt, and black pepper.

Step 4

Rub the herb mixture evenly onto both sides of each pork chop, ensuring they are well coated.

Step 5

Heat an oven-safe skillet over medium heat. Add the pork chops and sear for 2-3 minutes on each side, or until a golden crust forms.

Step 6

Remove the skillet from heat and pour in the chicken broth and lemon juice around the pork chops.

Step 7

Transfer the skillet to the preheated oven and roast for 10-12 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

Step 8

Remove the skillet from the oven and let the pork chops rest for 5 minutes to retain their juices.

Step 9

Serve warm alongside your favorite diabetes-friendly sides, such as steamed vegetables or a fresh salad.
