Directions

Step 1

In a medium-sized mixing bowl, whisk together the eggs until well combined and slightly frothy.

Step 2

In a saucepan over medium heat, combine the unsweetened almond milk, heavy cream, and granulated erythritol. Stir continuously until the mixture begins to steam but does not boil, about 5–7 minutes.

Slowly add half a cup of the hot almond milk mixture into the whisked eggs, whisking constantly to temper the eggs and avoid scrambling.

Gradually pour the tempered egg mixture into the saucepan with the remaining almond milk mixture, whisking constantly to combine.
