Ingredients

  • 2 cups Pitted dates
  • 1 cup Water
  • 1 teaspoon Vanilla extract
  • 2 cups Rolled oats
  • 1 cup Whole wheat flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Unsalted butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan or line it with parchment paper.

Step 2

In a medium saucepan, combine the pitted dates and water. Cook over medium heat, stirring occasionally, until the dates break down and form a thick paste (about 8-10 minutes). Remove from heat and stir in the vanilla extract. Set aside to cool.

Step 3

In a large mixing bowl, combine rolled oats, whole wheat flour, ground cinnamon, baking soda, and salt. Stir until evenly combined.

Step 4

Add the unsweetened applesauce and melted unsalted butter to the dry ingredients. Mix until the mixture is crumbly and holds together when pressed.

Step 5

Press half of the oat mixture evenly into the bottom of the prepared baking pan to form a crust.

Spread the date mixture evenly over the crust layer.

Sprinkle the remaining oat mixture over the date layer and gently press it down to form the top crust.
