  • 0.5 teaspoon Ground ginger
  • 1 teaspoon Baking powder
  • 3 large Eggs
  • 100 grams Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 50 grams Chopped nuts (e.g., walnuts or almonds)

Directions

Step 1

Preheat your oven to 150°C (300°F) and line a 20cm (8-inch) round cake tin or springform pan with parchment paper.

Step 2

In a medium saucepan, combine the mixed dried fruits with the orange juice, orange zest, and lemon zest. Heat gently on low until the fruits plump up and the mixture starts to thicken, about 5-7 minutes. Set aside to cool.
