Ingredients

  • 3 tablespoons Unsweetened cocoa powder
  • 3 tablespoons Erythritol or preferred sugar substitute
  • 1 cup Heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Gelatin powder
  • 2 tablespoons Water
  • 2 large Egg whites
  • 1 pinch Salt
  • 1 ounce Dark chocolate (85% cocoa or higher, optional)

Directions

Step 1

In a small bowl, combine the gelatin powder and water. Let it sit for 5 minutes to bloom.

Step 2

Meanwhile, in a large mixing bowl, sift the cocoa powder and erythritol to remove any lumps.

Step 3

Heat the bloomed gelatin in the microwave for 10-15 seconds until dissolved, then set aside to cool slightly.

Step 4

Using an electric mixer, whip the heavy cream with vanilla extract until soft peaks form. Fold this into the cocoa-erythritol mixture until fully combined.

Step 5

In another clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form.

Step 6

Carefully fold the egg whites into the chocolate mixture in three batches, being gentle to retain as much air as possible.

Step 7

If desired, melt the dark chocolate and drizzle it into the mousse mixture for added richness, then gently fold.

Step 8

Divide the mousse into four serving glasses or bowls and refrigerate for at least 2 hours to set.

Step 9

Once set, optionally garnish with a dusting of unsweetened cocoa powder or a small shaving of dark chocolate before serving.
