  • 2 medium turnips, peeled and cubed
  • 1 medium zucchini, cubed
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 0.5 teaspoons black pepper
  • 0 optional salt (optional, to taste)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with a pinch of black pepper, then brown it in batches on all sides. Remove the browned meat and set it aside.

Lower the heat to medium. Add the remaining tablespoon of olive oil to the pot, then sauté the diced onion, celery, and carrots for 5 minutes until they soften slightly.
