Ingredients

  • 4 cups Carrots
  • 2 tablespoons Unsalted butter (or plant-based alternative)
  • 2 tablespoons Dry sherry
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a medium-sized baking dish or an 8x8-inch glass dish with a small amount of butter or a plant-based alternative.

Step 2

Wash, peel, and grate the carrots until you have 4 cups’ worth. Place the grated carrots into a mixing bowl.

Step 3

Melt the unsalted butter in a small saucepan over low heat or in the microwave. Add the melted butter to the grated carrots and toss until evenly coated.

Step 4

Pour in the dry sherry, ground cinnamon, and salt. Gently mix until all ingredients are evenly combined.

Step 5

Transfer the carrot mixture to the prepared baking dish, spreading it out into an even layer.

Step 6

Cover the dish securely with aluminum foil. Bake in the preheated oven for 20 minutes.

Step 7

After 20 minutes, remove the foil and bake for another 5–7 minutes, or until the carrots are tender and just slightly caramelized around the edges.

Step 8

Remove from the oven and let cool for 3–5 minutes. Optionally, sprinkle with chopped fresh parsley for added color and brightness.

Step 9

Serve warm as a side dish. Enjoy!
