Ingredients

  • 1 cup Yellow split peas
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Salt
  • 2 cups Water
  • 2 cups All-purpose flour
  • 3 tablespoons Vegetable oil
  • 0.75 cup Warm water (for dough)
  • 2 large cloves Garlic cloves, minced
  • 0.5 teaspoon Ground coriander
  • 1 cup Vegetable oil (for frying)

Directions

Step 1

1. Rinse the yellow split peas thoroughly under running water until the water runs clear.

Step 2

2. Boil 2 cups of water in a medium pot. Add the split peas and 0.5 teaspoon of turmeric powder. Cook on medium heat for 20 minutes, or until the peas are soft but not mushy. Drain and cool.

Step 3

3. In a food processor, blend the cooked peas with 1 teaspoon of cumin, garlic, salt, and ground coriander until it forms a smooth, crumbly mixture. Set aside.

Step 4

4. In a large mixing bowl, combine the all-purpose flour and 0.5 teaspoon of salt. Add 2 tablespoons of vegetable oil and mix until the flour resembles breadcrumbs.

Step 5

5. Gradually add 0.75 cup of warm water to the flour mixture and knead into a soft, smooth dough. Cover with a damp cloth and let rest for 30 minutes.

Step 6

6. Divide the dough into 8 equal portions and the split pea filling into 8 portions.

Step 7

7. Flatten a dough ball and roll into a small circle, about 4 inches in diameter. Place one portion of the split pea filling in the center. Fold the edges over the filling and pinch to seal.

Step 8

8. Gently roll the stuffed ball into a flat circle, about 6-7 inches in diameter. Repeat with the remaining dough and filling.

Step 9

9. Heat a skillet or tawa over medium heat and add a thin layer of vegetable oil. Place the dhal puri on the skillet and cook for 2-3 minutes per side, until golden brown spots appear.

Step 10

10. Serve warm with curries, chutneys, or enjoy on its own.
