  • 0.5 cups Granulated sugar
  • 0.5 teaspoons Salt
  • 1 cups Unsalted butter (cold, cubed)
  • 0.5 cups Ice water
  • 5 cups Dewberries (fresh or frozen)
  • 1 cups Granulated sugar (for filling)
  • 3 tablespoons Cornstarch
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Unsalted butter (for filling)
  • 1 Egg (beaten, for egg wash)
  • 2 tablespoons Coarse sugar (optional, for topping)

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your hands to combine until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.

Preheat your oven to 375°F (190°C).

In a large bowl, toss the dewberries with the granulated sugar, cornstarch, and lemon juice. Mix gently to combine and set aside.
