Ingredients

  • 6 pieces Roma tomatoes
  • 4 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Apple cider vinegar
  • 0.5 teaspoon Paprika
  • 2 pieces Hard-boiled eggs
  • 2 tablespoons Chives
  • 0.25 teaspoon Kosher salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Panko breadcrumbs
  • 1 teaspoon Olive oil

Directions

Step 1

Wash the Roma tomatoes thoroughly and slice them in half lengthwise.

Step 2

Using a small spoon, scoop out the seeds and pulp from each tomato half to create a hollow for stuffing. Set the hollowed-out tomato halves aside.

Step 3

Finely chop the hard-boiled eggs and transfer them to a medium mixing bowl.

Step 4

To the bowl with the eggs, add mayonnaise, Dijon mustard, apple cider vinegar, paprika, kosher salt, and black pepper. Mix everything together until fully combined and smooth.

Step 5

Finely chop the chives and fold half of them into the egg mixture. Reserve the other half for garnish.

Step 6

Spoon the egg mixture evenly into the hollowed-out tomato halves, slightly mounding the filling on top.

Step 7

In a small pan, heat the olive oil over medium heat. Add the panko breadcrumbs and toast them, stirring often, until golden brown. Remove from the heat and let cool for 1-2 minutes.
