Ingredients

  • 8 pieces sausages (pork, beef, or chicken)
  • 1 large onion
  • 2 pieces garlic cloves
  • 1 tablespoon olive oil
  • 1.5 cups beef stock
  • 2 tablespoons tomato paste
  • 1.5 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 teaspoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon paprika
  • 0.5 teaspoon red chili flakes
  • 1 tablespoon cornflour (optional, for thickening)
  • 2 tablespoons water (if using cornflour)
  • 0 to taste salt and pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or frying pan over medium heat.

Step 2

Add the sausages to the pan and cook until browned on all sides, about 5-7 minutes. Remove and set them aside.

Step 3

In the same pan, add the sliced onion and cook for 3-4 minutes until softened and slightly caramelized.

Step 4

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Return the sausages to the pan and pour in the beef stock.

Step 6

Add the tomato paste, Worcestershire sauce, Dijon mustard, brown sugar, apple cider vinegar, paprika, and red chili flakes. Stir well to combine.

Step 7

Bring the mixture to a simmer, then reduce the heat to low and cook for 20 minutes, allowing the sausages to cook through and the flavors to meld together.

Step 8

If the sauce needs thickening, mix the cornflour with water to create a slurry, then stir it into the sauce during the last 5 minutes of cooking.

Step 9

Season the dish with salt and pepper to taste.

Step 10

Serve hot, garnished with fresh parsley if desired. Pair with creamy mashed potatoes, rice, or crusty bread for a complete meal.
