Ingredients

  • 6 large Eggs
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon White vinegar
  • 1 tablespoon Capers (drained and chopped)
  • 0.25 teaspoons Paprika
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Fresh chives (chopped, optional for garnish)

Directions

Step 1

Place the eggs in a single layer in a saucepan and cover them with cold water by about 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan with a lid, remove it from the heat, and let the eggs sit in the hot water for 9-12 minutes.

Step 3

After the eggs are done cooking, transfer them to a bowl of ice water to cool completely, about 5 minutes.

Step 4

Peel the eggs carefully and slice them in half lengthwise.

Step 5

Scoop out the yolks and place them in a mixing bowl. Arrange the egg whites on a serving platter, cut side up.

Step 6

Use a fork to mash the yolks until they are crumbly and well-broken down.

Step 7

Add the mayonnaise, Dijon mustard, white vinegar, chopped capers, paprika, salt, and black pepper to the yolks. Mix until the filling is smooth and creamy.

Step 8

Taste and adjust seasoning if needed.

Step 9

Spoon or pipe the yolk mixture into the egg white halves, filling them generously.

Step 10

Sprinkle with additional paprika and chopped chives for garnish, if desired.

Step 11

Refrigerate for at least 15 minutes before serving to allow flavors to meld. Serve chilled.
