  • 1 teaspoons Dijon mustard

  • 0.5 teaspoons smoked paprika
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoons unsalted butter
  • 2 tablespoons chives

Directions

Step 1

Place the eggs in a single layer in a saucepan and cover them with water by an inch. Bring the water to a boil over medium heat, then cover the saucepan, remove it from heat, and let the eggs sit for 12 minutes.

Step 2

After 12 minutes, transfer the eggs to an ice water bath to cool for at least 5 minutes. Peel the eggs under cool running water and slice them in half lengthwise.

Gently scoop out the yolks and place them in a mixing bowl, setting the egg white halves aside on a serving platter.

Mash the yolks with a fork until crumbly. Add Greek yogurt, Dijon mustard, lemon juice, smoked paprika, salt, and black pepper. Stir until the mixture is smooth and creamy.
