Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoons smoked paprika
  • 1 tablespoon chives
  • 2 slices pickled jalapeños
  • 1 teaspoon white vinegar
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 slice, crumbled crispy bacon

Directions

Step 1

Place the eggs in a medium saucepan and cover them with water. Bring to a rolling boil over medium-high heat, then cover the pan, remove it from the heat, and let the eggs sit for 10 minutes.

Step 2

Carefully transfer the eggs to a bowl of ice water. Let them cool for at least 5 minutes to make peeling easier.

Step 3

Peel the eggs under running cold water to ensure a smooth finish. Pat them dry with paper towels.

Step 4

Slice the eggs in half lengthwise and gently scoop out the yolks into a mixing bowl. Set the egg white halves on a serving platter.

Step 5

Mash the yolks with a fork until finely crumbled. Stir in mayonnaise, Dijon mustard, smoked paprika, chopped chives, finely diced pickled jalapeños, white vinegar, salt, and black pepper until smooth and creamy.

Step 6

Transfer the yolk mixture to a piping bag or a resealable plastic bag with one corner snipped off. Pipe the mixture into the egg white halves, evenly distributing it among them.

Step 7

Top each deviled egg with a sprinkle of smoked paprika and crumbled crispy bacon for garnish.

Step 8

Refrigerate the eggs for at least 15 minutes before serving to enhance the flavors. Serve chilled and enjoy!
