Ingredients

  • 4 large Eggs
  • 2 ripe Avocados
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Chives
  • 0.25 teaspoon Hot sauce (optional)

Directions

Step 1

Place eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat, cover, and let simmer for 10 minutes to hard boil the eggs.

Step 2

Once the eggs are done, transfer them to an ice bath to cool for 5 minutes. Peel the eggs and slice them in half lengthwise.

Step 3

Remove the yolks from the eggs and place them in a medium bowl. Set the egg whites aside for another use or discard them.

Step 4

Mash the egg yolks with a fork until smooth. Add mayonnaise, Dijon mustard, lemon juice, paprika, salt, black pepper, and hot sauce (if using). Mix until well combined and creamy.
