Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cups Unsweetened cocoa powder
  • 2 cups Granulated sugar
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 1 cup Buttermilk
  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 0.75 cups Semi-sweet chocolate chips
  • 0.5 cups Heavy cream
  • 0.25 cups Powdered sugar (optional, for thicker icing)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until thoroughly combined.

Step 3

Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined. Do not over-mix.

Step 4

Gradually stir in the boiling water. The batter will be thin, but this is normal—this helps create a moist cake.

Step 5

Divide the batter evenly between the prepared cake pans and tap them gently on the counter to release air bubbles.

Step 6

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7

Let the cakes cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 8

While the cakes are cooling, prepare the chocolaty drizzle icing. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer (don’t let it boil).

Step 9

Pour the hot cream over the semi-sweet chocolate chips in a separate bowl. Let it sit for 2 minutes, then whisk until the mixture is smooth and glossy.

Step 10

Optional: If you prefer a slightly thicker icing, whisk in the powdered sugar until fully dissolved.

Step 11

Once the cakes are completely cool, place one layer on a serving plate. Spread a thin layer of the drizzle icing on top.

Step 12

Stack the second cake layer on top and pour the rest of the drizzle icing over the top, letting it cascade naturally down the sides. Use a spatula to guide the icing as needed.

Step 13

Let the cake sit for 15-20 minutes to allow the icing to set before serving. Slice and enjoy!
