Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cups Unsweetened cocoa powder
  • 1.25 teaspoons Baking soda
  • 0.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter (at room temperature)
  • 1.5 cups Granulated sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 1 cups Buttermilk
  • 0.5 cups Hot water
  • 0.5 cups Dark rum
  • 2 ounces Dark chocolate (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3

In a separate mixing bowl, using a stand mixer or hand-held electric mixer, cream the butter and sugar together on medium speed until light and fluffy, about 3-4 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Reduce the mixer speed to low and alternately add the dry ingredients and buttermilk to the wet mixture in three parts, beginning and ending with the dry mixture. Mix just until combined, being careful not to overmix.

Step 6

Stir the hot water into the batter slowly. The batter will be thin, but this is normal.

Step 7

Divide the batter equally between the prepared cake pans and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cakes to cool in the pans for 10 minutes. Then transfer them to wire racks to cool completely.

Step 9

Once cooled, poke small holes all over the surfaces of both cake layers using a toothpick or skewer.

Step 10

Brush or spoon the dark rum evenly over the tops of both layers, allowing it to soak in for about 20 minutes.

Step 11

Optional: To garnish, grate or shave the dark chocolate and sprinkle it over the cake for a luxurious finish.

Step 12

Assemble the cake by stacking the layers with your preferred frosting or leaving it as-is for a rustic look. Cut and serve to enjoy!
