Ingredients

  • 4 cups Kale
  • 2 cups Red cabbage, shredded
  • 1 cup Carrots, shredded
  • 1 cup Broccoli, finely chopped
  • 1 Cucumber, diced
  • 0.5 cup Parsley, chopped
  • 0.25 cup Pumpkin seeds
  • 0.25 cup Sunflower seeds
  • 3 tablespoons Lemon juice
  • 2 tablespoons Tahini
  • 2 tablespoons Olive oil
  • 1 teaspoon Maple syrup
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry all the vegetables thoroughly.

Step 2

De-stem the kale and chop it into bite-sized pieces. Place it in a large salad bowl.

Step 3

Add a pinch of salt to the kale and massage it with your hands for 1-2 minutes until it softens slightly.

Step 4

Add the shredded red cabbage, shredded carrots, chopped broccoli, diced cucumber, and chopped parsley to the salad bowl with the kale.
