  • 0.5 cups, for garnish (optional) coconut milk
  • 2 tablespoons, chopped, for garnish fresh parsley or cilantro

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté for 3-4 minutes until softened.

Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
