Ingredients

  • 450 grams Ground chicken
  • 1 head Iceberg or butter lettuce
  • 1 Carrot, finely shredded
  • 1 Red bell pepper, diced
  • 100 grams Water chestnuts, chopped
  • 2 Green onions, sliced
  • 4 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, freshly grated
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Crushed peanuts
  • 4 Lime wedges

Directions

Step 1

Wash the lettuce head and gently separate the leaves to create 'cups'. Pat them dry and set aside.

Step 2

Heat vegetable oil in a large skillet over medium-high heat.

Step 3

Add minced garlic and grated ginger to the skillet. Sauté for 30 seconds until fragrant.

Step 4

Add the ground chicken to the skillet and cook for about 5-7 minutes, breaking it apart with a spatula, until fully cooked and no longer pink.

Step 5

Stir in the diced red bell pepper, shredded carrot, and chopped water chestnuts. Cook for another 2-3 minutes until the vegetables are slightly softened.

In a small bowl, mix together soy sauce, hoisin sauce, and sesame oil. Pour this sauce mixture into the skillet and stir to coat the chicken and veggies evenly. Cook for another 2 minutes.

Remove from heat and stir in the sliced green onions.
