  • 2 cans (15 ounces each) Diced tomatoes
  • 1 can (6 ounces) Tomato paste
  • 1 cup Beef broth
  • 1 medium Yellow onion, diced
  • 1 large Bell pepper, diced (any color)
  • 4 cloves Garlic cloves, minced
  • 3 tablespoons Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cayenne pepper (optional, for heat)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink. Drain any excess grease and transfer the cooked beef to the slow cooker.

Step 2

In the same skillet, add the diced onion and bell pepper. Cook for 3-4 minutes until they begin to soften. Add the minced garlic and cook for an additional minute. Transfer the mixture to the slow cooker.
