Ingredients

  • 3 large Eggs
  • 0.5 medium, diced Bell pepper
  • 0.25 medium, diced Onion
  • 0.25 cup, diced Ham
  • 0.25 cup, shredded Cheddar cheese
  • 0.25 teaspoon Salt
  • 0.13 teaspoon Black pepper
  • 1 tablespoon Butter
  • 2 slices Bread slices
  • 1 tablespoon Mayonnaise

Directions

Step 1

Crack the eggs into a medium-sized bowl and whisk them together with salt and black pepper until well combined.

Step 2

Heat a medium non-stick skillet over medium heat and melt the butter.

Step 3

Add the diced bell pepper, onion, and ham to the skillet. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened and the ham is lightly browned.

Step 4

Pour the whisked eggs into the skillet, spreading them evenly over the vegetable and ham mixture.

Step 5

Cook for 2-3 minutes, until the edges start to set. Use a spatula to gently fold the omelet in half. Cook for another 1-2 minutes until the eggs are fully set.

Step 6

Sprinkle the shredded cheddar cheese over one half of the omelet and fold it again to cover the cheese. Let it cook for an additional 30 seconds to melt the cheese. Remove the omelet from the skillet and set aside.

Step 7

Toast both slices of bread until golden brown. Spread the mayonnaise evenly onto one side of each toast slice.

Step 8

Place the cooked omelet onto one slice of the bread. Top with the other slice, mayonnaise side down, to form a sandwich.

Step 9

Slice the sandwich in half, if desired, and serve warm.
