Ingredients

  • 1 lb beef stew meat
  • 2 tbsp olive oil

  • 1 15 oz can diced tomatoes
  • 8 cups beef broth
  • 0.75 cup pearl barley
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup frozen green beans
  • 1 cup frozen peas

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the beef stew meat and sear it on all sides until browned, about 5 minutes. Remove the beef and set it aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until softened.

Stir in the minced garlic and cook for another 1 minute until fragrant.
