Ingredients

  • 6 medium Russet potatoes
  • 4 large Hard-boiled eggs
  • 1 cup Mayonnaise

  • 2 teaspoons Sugar
  • 2 stalks Celery
  • 1 small Red onion
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.

Step 2

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and cook the potatoes for 10-15 minutes, or until they are fork-tender. Drain and set aside to cool.

While the potatoes are cooking, chop the hard-boiled eggs, celery, and red onion into small pieces.
