Ingredients

  • 8 tablespoons Unsalted butter
  • 3/4 cup Light brown sugar
  • 1/4 cup Granulated sugar
  • 2 tablespoons Light corn syrup
  • 1/3 cup All-purpose flour
  • 1/2 cup Macadamia nuts, finely chopped
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium saucepan, melt the unsalted butter over low heat. Once melted, add the light brown sugar, granulated sugar, and light corn syrup, stirring continuously until the mixture is smooth and combined. Remove from heat.

Step 3

Stir in the all-purpose flour, finely chopped macadamia nuts, vanilla extract, and salt until the mixture forms a cohesive batter.

Step 4

Using a teaspoon, scoop small amounts of batter onto the prepared baking sheets, spacing them about 3 inches apart as the cookies will spread while baking.

Step 5

Place one baking sheet in the oven and bake for 7-8 minutes, or until the cookies are golden brown and lacy in appearance. Keep an eye on them as they can burn quickly.

Step 6

Remove the cookies from the oven and allow them to cool on the baking sheet for 2-3 minutes, then carefully transfer them to a wire rack to cool completely. Repeat the baking process with the remaining batter.

Step 7

Once cooled, the cookies can be stored in an airtight container at room temperature for up to 3 days.
