Ingredients

  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 can (15 oz) Pinto beans, drained and rinsed
  • 1 can (15 oz) Whole kernel corn, drained
  • 1 packet (1 oz) Taco seasoning mix
  • 1 packet (1 oz) Ranch salad dressing mix
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped (optional, for garnish)
  • 1 bag Tortilla chips (optional, for serving)
  • 1 cup Shredded cheese (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion becomes translucent and fragrant.

Add the ground beef to the pot, breaking it apart with a spatula or wooden spoon as it cooks. Cook until the beef is browned and fully cooked through, about 5-7 minutes. Drain any excess grease if necessary.
