Ingredients

  • 400 grams fresh salmon fillets, skinless
  • 60 grams panko breadcrumbs
  • 1 large egg
  • 1 tablespoon dijon mustard
  • 2 tablespoons fresh dill, chopped
  • 1 stalk green onion, finely sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 pieces brioche buns
  • 120 grams yogurt (plain, unsweetened)
  • 1 tablespoon lemon juice
  • 0.5 piece cucumber, sliced
  • 2 cups mixed greens

Directions

Step 1

Trim and finely chop the salmon fillets with a sharp knife until you have slightly chunky bits; do not puree them into a paste.

Step 2

In a large mixing bowl, combine the chopped salmon, panko breadcrumbs, egg, dijon mustard, chopped dill, green onion, minced garlic, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Divide the mixture into 4 equal portions and shape each portion into a patty. Place the patties on a plate, cover them, and refrigerate for 15 minutes to set.
