Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 teaspoons Salt
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Honey
  • 2 pieces Celery stalks, diced
  • 0.5 cup Red onion, finely chopped
  • 0.5 cup Dill pickles, finely chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 pieces Hard-boiled eggs, chopped

Directions

Step 1

Wash and peel the Yukon Gold potatoes. Cut them into bite-sized chunks, about 1-inch in size.

Step 2

Place the potato chunks into a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Reduce to a simmer and cook the potatoes for 10-12 minutes, or until fork-tender. Avoid overcooking to prevent them from becoming mushy.

Step 4

Once cooked, drain the potatoes in a colander and immediately rinse with cold water to stop the cooking process. Let them cool completely.

Step 5

In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, honey, 1 teaspoon of salt, and black pepper. Whisk until smooth to make the dressing.
