Rinse the dried pinto beans under cold water, removing any debris. Place them in a large bowl and cover with water, letting them soak overnight or for at least 8 hours. Drain and set aside.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes or until soft and translucent.
Add the minced garlic and jalapeño (if using) to the pot, and cook for an additional 1-2 minutes until fragrant.
