Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter (for frosting)
  • 4 cups powdered sugar
  • 0.5 cup unsweetened cocoa powder (for frosting)
  • 0.33 cup whole milk (for frosting)
  • 1 teaspoon pure vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix until combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until the batter is smooth and creamy.

Step 4

Gradually stir in the boiling water (the batter will be thin). Mix until well-incorporated.

Step 5

Divide the batter evenly between the prepared cake pans. Tap the pans lightly on the counter to remove air bubbles.

Step 6

Bake in the preheated oven for 30–35 minutes or until a toothpick inserted into the center comes out clean.

Step 7

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely before frosting.

Step 8

To prepare the frosting, beat the butter in a large bowl until light and fluffy.

Step 9

Gradually add the powdered sugar and cocoa powder, alternating with the milk, starting and ending with the dry ingredients. Beat on low speed until combined, then increase to high speed and beat for another 1–2 minutes.

Step 10

Mix in the vanilla extract and adjust the frosting consistency with an extra splash of milk if needed.

Step 11

Place one cake layer on a serving plate and spread an even layer of frosting over the top. Add the second layer on top and frost the entire cake.

Step 12

Decorate as desired and serve. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
