Ingredients

  • 1 cup All-purpose flour
  • 1 cup Yellow cornmeal
  • 0.25 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Whole milk
  • 0.25 cup Unsalted butter (melted and cooled)
  • 2 Large eggs
  • 2 tablespoons Honey
  • 0.5 cup Canned corn kernels (drained and rinsed)
  • 0.5 cup Shredded cheddar cheese (optional)
  • 2 tablespoons Chopped fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease or line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt until evenly combined.

Step 3

In a separate medium bowl, whisk together the milk, melted butter, eggs, and honey until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until just combined, being careful not to overmix. The batter will be slightly lumpy.

Step 5

Fold in the corn kernels and shredded cheddar cheese (if using) until evenly distributed.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

If desired, sprinkle the tops with chopped fresh chives for garnish before serving.

Step 10

Serve warm with butter or enjoy on their own. These muffins can also be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage.
