Ingredients

  • 3 cups Cooked shredded chicken
  • 10 pieces Flour tortillas
  • 3 cups Shredded Mexican blend cheese
  • 2 cups Enchilada sauce
  • 4 ounces Cream cheese
  • 1 cup Sour cream
  • 1 4-ounce can Diced green chiles
  • 1 tablespoon Chopped cilantro (optional for garnish)
  • 2 tablespoons Chopped green onions (optional for garnish)
  • 1 as needed Cooking spray
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with cooking spray and set aside.

Step 2

In a medium-sized pot over low heat, add cream cheese, sour cream, diced green chiles, salt, and black pepper. Stir until the mixture is smooth and creamy. Remove from heat.

Step 3

In a large mixing bowl, combine the shredded chicken with 1 cup of the shredded Mexican blend cheese. Add half of the creamy mixture to the chicken and mix well.
