Ingredients

  • 2 cups rolled oats
  • 1 cup protein powder (vanilla or chocolate flavor)
  • 1 cup natural peanut butter (or almond butter)
  • 0.5 cup honey (or maple syrup)
  • 0.33 cup mini chocolate chips (optional)
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (dairy or plant-based)
  • 1 pinch of salt

Directions

Step 1

In a large mixing bowl, combine the rolled oats, protein powder, chia seeds, and a pinch of salt. Mix well to ensure even distribution.

Step 2

Add the peanut butter, honey, and vanilla extract to the dry ingredients. Stir everything together using a sturdy spoon or spatula until the mixture becomes crumbly.

Step 3

Gradually add the milk one tablespoon at a time and continue mixing. The goal is to create a cohesive dough that holds together when pressed. Adjust the milk quantity slightly if the mixture is too dry or too sticky.

Step 4

Fold in the mini chocolate chips, if using, to add a hint of sweetness and texture.

Step 5

Line an 8x8-inch baking dish or pan with parchment paper. Transfer the mixture into the pan and firmly press it down using the back of a spatula or your hands to create an even layer.

Step 6

Cover the pan and refrigerate for at least 1 hour to allow the bars to set properly.

Step 7

Once set, remove the mixture from the pan by lifting the parchment paper. Slice into 12 bars or squares using a sharp knife.

Step 8

Store the bars in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.
