Ingredients

  • 4 pieces Delmonico steaks
  • 2 teaspoons Salt
  • 2 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 2 large Yellow onions
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Brown sugar
  • 2 cloves Garlic cloves
  • 1 cup Beef stock
  • 1 tablespoon Ketchup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard

Directions

Step 1

Season the Delmonico steaks on both sides with 1 teaspoon of salt and 1 teaspoon of black pepper. Let them rest at room temperature for 15 minutes to allow the seasoning to infuse.

Step 2

Peel and thinly slice the onions. Mince the garlic cloves and set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and cook for 10-12 minutes, stirring occasionally, until they are soft and caramelized.

Step 4

Reduce the heat to low and add the balsamic vinegar, brown sugar, and a pinch of salt to the onions. Stir well and cook for another 5 minutes. Remove the onions from the skillet and set aside.

In the same skillet, heat another tablespoon of olive oil over medium-high heat. Add the steaks and sear for 3-4 minutes per side to achieve a nice crust, then reduce the heat and cook to your preferred doneness (135°F for medium-rare). Remove the steaks from the skillet and let them rest, loosely covered with foil.

While the steaks rest, make the steak sauce. Reduce the heat to medium and melt the remaining 2 tablespoons of butter in the skillet. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 7

Pour in the beef stock and scrape up any browned bits from the skillet. Stir in the ketchup, Worcestershire sauce, and Dijon mustard. Let the sauce simmer for 5 minutes until slightly thickened.

Step 8

To serve, place each steak on a plate and top with the balsamic onions. Drizzle the steak sauce over the top or serve it on the side.
