Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup gruyere cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 1 tsp Dijon mustard
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter (for topping)
  • 1 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Step 2

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 4

Gradually pour in the milk and heavy cream while whisking to ensure no lumps. Cook for 3-5 minutes, stirring frequently, until the mixture begins to thicken.

Step 5

Lower the heat and stir in the cheddar cheese, gruyere cheese, and parmesan cheese. Mix until the cheese has melted and the sauce is smooth.

Step 6

Add the Dijon mustard, paprika, salt, and pepper to the cheese sauce. Taste and adjust seasoning if needed.

Step 7

Combine the cooked macaroni with the cheese sauce in a large mixing bowl, stirring until the pasta is evenly coated.

Step 8

Pour the macaroni and cheese mixture into the prepared baking dish, spreading it into an even layer.

Step 9

In a small bowl, combine the panko breadcrumbs with 2 tablespoons of melted butter. Sprinkle the breadcrumb mixture evenly over the macaroni and cheese.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the top is golden and crispy.

Step 11

Remove the dish from the oven and let it cool for 5 minutes before serving. Garnish with fresh parsley, if desired.
