Ingredients

  • 1 medium-sized Green (unripe) papaya
  • 10 pieces Cherry tomatoes
  • 2 pieces Garlic cloves
  • 6 pieces Fresh green beans
  • 3 tablespoons Fresh lime juice
  • 2 tablespoons Fish sauce
  • 2 teaspoons Palm sugar
  • 2 pieces Fresh Thai chilies
  • 2 tablespoons Roasted peanuts
  • 1 tablespoon Fresh cilantro (optional, for garnish)

Directions

Step 1

Peel the green papaya and remove the seeds. Shred it into thin strips using a julienne peeler or a box grater.

Step 2

Rinse and trim the green beans, then cut them into 2-inch pieces.

Step 3

Halve the cherry tomatoes and set them aside.

Step 4

In a mortar and pestle, add the garlic cloves and Thai chilies. Pound until they are broken down into a rough paste.

Step 5

Add the palm sugar to the mortar and lightly pound to mix it in with the garlic and chilies.

Step 6

Add the halved cherry tomatoes and green beans to the mortar. Lightly crush them to release their juices and flavors, but be careful not to over-mash them.

Step 7

Pour in the lime juice and fish sauce. Mix everything together thoroughly in the mortar to combine all the flavors.

Step 8

In a large mixing bowl, combine the shredded green papaya with the contents of the mortar. Toss everything together until the papaya is evenly coated with the dressing.

Step 9

Sprinkle the roasted peanuts on top and toss lightly again.

Step 10

Transfer the salad to a serving plate or bowl. Garnish with freshly chopped cilantro, if desired, and serve immediately.
