Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10- to 12-inch cast iron skillet or ovenproof frying pan into the oven while it preheats.

Step 2

In a blender, combine the eggs, milk, flour, sugar, vanilla extract, and salt. Blend on high speed for 20-30 seconds until the batter is smooth and frothy. If you don't have a blender, you can whisk the ingredients together in a bowl until no lumps remain.

Step 3

Carefully remove the preheated skillet from the oven. Add the butter to the skillet and swirl it around until it has melted and evenly coats the bottom and sides of the pan.

Step 4

Immediately pour the batter into the hot skillet. Quickly return the skillet to the oven and bake for 18-20 minutes, or until the Dutch Baby is puffed up and golden brown around the edges.
