Ingredients

  • 4 medium zucchini
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic cloves
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon black pepper
  • 2 tablespoons unsalted butter

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with a little olive oil or butter.

Wash the zucchini and slice them into thin rounds, about 1/4 inch thick. Sprinkle the slices with 1 teaspoon of salt and place them in a colander to drain for 10 minutes. Pat them dry with paper towels.
